Nowadays, there is a pressing demand for precise tools to quantify sustainability and assess the contributions of products and processes to sustainable development. This requirement extends to the wine industry as well. In 2013, the European Commission introduced the Product Environmental Footprint (PEF), providing a standardized methodology grounded in life cycle thinking for evaluating the environmental impacts of products across various industries. Despite its potential and the availability of specific guidelines for wine, the application of PEF remains unexplored in the sector. This study contributes to the knowledge by applying PEF to assess environmental impacts of Italian still and sparkling wines production, identifying variations from European benchmarks. Additionally, it aims to pinpoint pivotal hotspots and provide guidance for effective mitigation strategies. Average data from 27 wines certified as sustainable under Italian VIVA program, were collected and used to perform a life cycle assessment in accordance with PEF protocol. Results revealed that Italian still wines exhibited a greater environmental impact than the European reference value, while sparkling wines displayed a slightly more favourable environmental performance compared to the European average. Notably, specific impact categories remained consistent across different wines and countries, with climate change, resource utilization, land use, and particulate matter harmful for human health accounting for nearly 80 % of the overall environmental footprint. Hotspot analysis identified the plantation/destruction of vines, energy usage in the winery, and packaging as significant factors influencing the environmental footprint of Italian wines. Addressing these elements could enhance the environmental competitiveness of the Italian wine sector relative to its European counterparts. However, to validate these findings, further studies are necessary, both within Italy and in other European wine-producing regions. Such research initiatives will improve and strengthen PEF methodology, bolstering its adoption as the primary tool for environmental impact assessment of wine at the community level.

The environmental impacts of the dairy industry, particularly global warming, are heavily influenced by milk production. Thus, there is an urgent need for farm-level actions and opportunities for improvement, implying mitigation strategies. The aim of this paper is to investigate five possible mitigation actions at the dairy farm and which one the farmers were willing to adopt: management and distribution of livestock manure and fertilizers, anaerobic manure treatment, optimization of the herd composition, feed quality, and heat recovery. A life cycle assessment was conducted on 63 farms using the product environmental footprint approach. The latter was divided into four quartiles, from which four representative farms were selected. For each farm, three scenarios have been analyzed considering the reference impact (reference scenario), the application of the mitigation actions (best-case scenario), and what farmers would implement (realistic scenario). Overall, the most effective mitigation actions in the best-case scenario were anaerobic manure treatment and the management and distribution of livestock manure and fertilizers, showing a potential reduction in total environmental impacts of 7-9% and 6-7%, respectively. Farmers' responses indicated a willingness to implement the latter mitigation strategy better. The optimization of the herd composition, feed quality, and heat recovery reported a range impact reduction between 0.01-5%.

Due to its strategic position and direct relationship with multiple stakeholders, the HoReCa sector can be a crucial node for the promotion of sustainability in the agri-food chain. However, the sector is currently responsible for a high environmental, social, and economic load. A recent response to these impacts is the diffusion of initiatives that assess and promote sustainable practices at the catering business level. The study aims to verify, using a scientific methodology, how current sustainability programs enable the HoReCa sector to achieve the Sustainable Development Goals (SDGs) and the level of implementation of sustainable practices in the Italian context. To this end, seven currently available national and international sustainability programs were selected, analyzed, and compared. A matrix approach was adopted to understand the balance of the programs with respect to the three pillars of sustainability. A more in-depth analysis was conducted on the Italian Ristorazione Sostenibile 360 (RS 360) case study, which was analyzed both in terms of compliance with the SDGs and in terms of the sustainability performance of the 29 restaurants that participated in the pilot phase of the project. Although the programs differ from each other, they comply with the 2030 Agenda goals, with a particular focus on achieving Goal 12. Furthermore, the analysis highlighted how a balance between the social, environmental, and economic spheres is essential to ensure the sustainable growth of the sector and to bring benefits to the community. As for the case study, 76 % of the analyzed restaurants achieve at least 70 % of the maximum level of fulfillment of the SDGs achievable by the HoReCa sector. This is a symptom of the sector's potential to contribute to supply chain sustainability. However, continuous improvement is essential to ensure the resilience of the HoReCa sector in the future.

Background: In 2017, the European Commission renewed the approval of glyphosate (GLY) but only for five years. GLY remains one of the most controversial and studied molecules. Method: A simplified method was tested for the determination of GLY in white rice (WR) and brown rice (BR), after extraction only with a methanol solution, by liquid chromatography coupled with inductively coupled mass triple quadrupole (HPLC-ICP-MS/MS) with a PRP-X100 anionic column. After performing a test on groundwater, the quantification of GLY in WR and BR was validated in terms of the LOD, LOQ, accuracy, precision, linearity, and the matrix effect. Results: The LOD was 0.0027 mg kg−1 for WR and 0.0136 mg kg−1 for BR. The LOQ was 0.0092 mg kg−1 for WR and 0.0456 mg kg−1 for BR. The mean recoveries were within 76−105% at three fortification levels. The relative standard deviation for the analysis (five replicates for three spike levels) was < 11% for both matrices. A linear response was confirmed in all cases in the entire concentration range (R2WR = 1.000 and R2BR = 0.9818). Conclusion: The proposed method could be considered useful for the determination of GLY in different types of rice and designed and adapted for other cereals. The matrix effect, quantified in BR matrix extraction, could be avoided by using a matrix-matched calibration line.

Food production and consumption have been recognized as a major source of environmental impacts. To ensure food security and a sustainable food system, dietary changes have been identified as one of the valuable strategies to reduce impacts on the environment while promoting human health. The vast majority of scientific literature has been focused on the effects of food consumption on climate change while neglecting to assess the degree of water scarcity impacts due to water consumption embodied in food. The research paper investigates the nexus between food consumption and impacts on water consumption adding important findings to a more recent growing body of studies estimating the water footprint (WF) of different dietary scenarios. This study uses the Water Footprint Network methodology and the AWARE (Available Water REmaining) characterization model to assess both the WF and the blue WSF (water scarcity footprint), respectively, of four Danish diets: standard, carnivore, vegetarian and vegan. In order to make them comparable, a total intake of 2000 kcal person-1 day-1 was set as energetic reference for all the diet scenarios considered. Using detailed trade and production data of agri-foods, we were able to assess the location of primary production and consequently to reveal countries mainly affected by water scarcity associated with import to satisfy Danish diets consumption. We found that while the vegan scenario scored the best environmental profile requiring 1489 L/cap/day calculated with the volumetric WF approach, it has the largest potential impacts on blue WSF of 10,477 LH20-eq/cap/day. This study has shown that more than 90% of impacts on water consumption occur outside the national borders, as a consequence of large quantities of fruits and nuts imported by countries already threatened by high water scarcity conditions such as USA and Mediterranean regions. This methodological approach may be used to compare environmental performances of recommended dietary guidelines and to assess impact scenarios of new trade policies, protecting local water scarcity levels.

The wine industry has faced two significant environmental problems in recent years: productivity is challenged by environmental trends such as global warming, and buyers are becoming more environmentally conscious. From an environmental standpoint, the food industry is one of the most impacting sectors and wine results as one of the most studied agri-food products in the scientific literature. In general, comprehensive studies that consider an application of set of indicators to evaluate the overall sustainability of wine sector are lacking in literature. This paper aims to carry out a sustainable assessment using different indicators for fifteen Italian red wines: Water Footprint (WF), Carbon Footprint (CF), Vineyard Indicator (VI), and Territory Indicator (TI). VI is an indicator of the vineyard's agronomic management's sustainability at plot level with values ranging from 0 (fully sustainable) to 1 (fully not sustainable), while TI covers the socio-economical aspects of sustainability. Considering system boundaries from cradle to grave, at 90% confidence interval, CF results ranged between 0.97 kg CO2 eq./functional unit and 1.97 kg CO2 eq./functional unit, with an average estimated at 1.47 kg CO2 eq./functional unit, while the WF of a 0.75 L bottle of wine from cradle to gate is 666.7 L/functional unit on average, out of which 86.75% is green, 1.92% is blue and 11.34% is grey water. Concerning the VI, at 90% confidence interval VI results were between 0.117 and 0.498 with an average estimated at 0.307. The results of the correlation analyses confirmed that each indicator is not statistically correlated with each other. Concerning the sub-indicators, a positive correlation has been found between the total CF and the sum of blue and grey WF. The application of a multi-criteria analysis for sustainability performances evaluation of the wine sector presented in this study can be used by wine companies' experts to better assess sustainability performances.

A deep understanding of the water-food nexus it is of a paramount importance as an avenue for sustainable development. Water forms the foundation for food production and a sustainable use of this resource is essential to guarantee the long-term productivity and to build resilient capacity in food and agricultural systems. Here we present methodological challenges regarding different water footprint (WF) methods applied to different dietary scenarios. The volumetric WF of three theoretical but realistic dietary patterns has been quantified (Omnivorous(O), Vegetarian(V) and Vegan(VG)), by means of the Water Footprint Network methodology. Moreover, the AWARE methodology is applied to assess potential impacts of water use trough the Water Scarcity Footprint (WSF). Diets are set to integrate and consider different drivers for food consumption encompassing the social value of the Mediterranean diet, healthy diet recommendations, food preferences of Italian consumers and the trade dimension of foodstuffs. In terms of volumetric WF, the O diet is the most water intensive one accounting for 2800 L/capita/day. A shift from an O to a V and VG diets allows to reduce the volumetric WF respectively 10% and 14%. Green water consumption accounts for the largest share (85%) in all three scenarios. Considering the WSF, V healthy diet is similar to the VG resulting in 11,069 and 11,130 L H2Oeq/capita/day respectively, whereas the O diet resulted in 11,932 L H2Oeq/capita/day. A sensitivity analysis was performed by changing each food category, one at a time, to its maximum and minimum value, in order to evaluate the significance of changes in the volumetric WF and WSF as well as the variables that mostly contribute to them. Results show that the volumetric WF associated with V and VG diets consumption overlay the O diet in respectively 53.5% and 35.7% of runs, while overlapping is improved comparing WSFs results. In this case, the WSFs of V and VG diets overlay the O diet in 83.5% of runs, suggesting that the alternative dietary scenarios would have little effect on the overall WSF and that the results are particularly sensitive to the different countries of importation. Results demonstrate the need to consider both volumetric WF and WSF with particular attention to trade analysis in order to support the development of new policies with the aim to foster sustainable consumption patterns, while preserving water resources.

The interest in sustainability, within the wine sector, is growing simultaneously with the awareness of the environmental impacts on climate change generated by the sector itself. In this context, environmental methodologies need to be applied: Carbon Footprint of a Product (CFP) is a quantitative expression of Greenhouse Gases (GHGs) emissions that plays an influent role in emission management and evaluation of mitigation measures over the full life cycle of a product. Moreover, CFP application in the agri-food sector remains scarce due to complex, expensive, and difficult data collection. This paper aims to determine the main factors that contribute to the CFP of 33 Italian wines from 16 wineries and compare and evaluate the results obtained using all the inventory data or results obtained using a simplified model with fewer inputs. The results per Function Unit (0.75/ L of wine) have been obtained using a unique methodology. Considering system boundaries from cradle to grave, at 90% confidence interval, CFP results ranged between 0.899 kg CO2 eq./FU and 1.882 kg CO2 eq./FU. The study underlines that most of the impacts can be related to few inventory data, in fact the main contributors of GHGs emissions are: glass bottle (29%), electricity used in the winery stage (14%), transport and distribution of the final product (13%), heat used in the winery phase (9%) and fossil fuels used in vineyard (8%). The results can be helpful to support the development of a simplified CFP and to obtain a benchmark for the CFP of the Italian wine sector. Furthermore, the present study can help businesses, policy makers and consumers in making decisions that lead to a better environmental outcome.

A growing number of companies around the world have already adopted sustainable practices as the majority of consumers are increasingly concerned with environmental and health issues. Despite this, lack of knowledge in sustainability can represent a limit to a sustainable conversion of Italian wine companies. This paper focuses on the development and suitability assessment of TERRITORY, a qualitative framework that assists sustainable management of winery farms with respect to biodiversity, neighbouring land use, agrochemical use, soil management, water management, landscape, site selection, heritage-cultural and aesthetic aspects, product quality and safety, human resource management, health of employees, community and consumers, economic repercussion of structures and territories, resource depletion, procurement practices and traceability. 47 wine companies have adopted the framework and its suitability has been tested and validated in a ten years trial. The present work reports the results of TERRITORY framework adoption in a winemaking cooperative, a grape and wine producer and a bottling firm, that respectively performed 76%, 92%, 62% (where 100% is maximum implementation of sustainable practices), with lower adherence in water, landscape and human resources management. The framework has driven wine companies towards improvements implementation: most relevant deal with a more effective communication to local community and consumers about health and safety, protection of biodiversity (towards a deeper knowledge of its territorial features), territorial values enforcement and improved communication. From the results it emerges that the framework guides the structural transformation of wine farms towards sustainable production and management by assisting the wine producers in identifying emerging opportunities in wine sector, such as fostering network with local communities, defining better soil, and water management through a multi-actor approach. Furthermore, it has been adopted in addressing the selection of quantitative indicators to adopt and monitoring campaigns.

The wine sector is paying more attention to sustainable wine production practices, but this topic is highly debated because organic viticulture aims to a reduction of environmental impacts, while conventional viticulture ensures an increase of yield. This work provides an economic and environmental comparison using different indicators whereas no previous studies on viticulture have faced on both aspects of sustainability. Two distinct vineyards within the same case study farm were considered, where conventional and organic viticulture practices were applied for 5 years. For each type of production, we calculated the economic benefit and environmental indicators such as the Water Footprint, Carbon Footprint, and an indicator of environmental performance associated with the vineyard phase ("Vineyard Management" or "Vigneto" indicator part of the Italian VIVA certification framework). This latter considers six sub-indicators investigating pesticides management, fertilizers management, organic matter content, soil compaction, soil erosion, and landscape quality. The multi criteria approach is a novel framework assessing sustainability on vineyard management using environmental indicators from VIVA calculator and the economic aspect. Main results showed that organic management in viticulture can be applied without having economic losses and with the benefit of better preserving the natural capital.

In recent decades, the debate on how to implement and measure sustainability in food production gained increasing importance and interest for agriculture. In the wine sector, producers are increasingly pursuing sustainable practices, including measures for water preservation from degradation and overuse. But methodologies for assessing and communicating the impacts on water resources need to be understood in detail to guide the selection of the most appropriate management practices, support environmental labelling and promote environmental-friendly products to consumers. This work focuses on the impacts on water resources associated with the production of Italian wine by comparing two methodologies: the Water-focused Life Cycle Assessment and the "Water" indicator included in the Italian "VIVA" certification framework, which is based on the Water Footprint Assessment. The two methodologies address the impact on freshwater consumption and degradation from a life cycle perspective. VIVA is based on a water balance method that reflects a volumetric measure of water consumption, while the LCA-based approach investigates both the freshwater consumption and depletion using different impact indicators. The study goal is to compare the two methodologies to understand how their outcomes can support and improve the management of water-related issues in wine production. One main conclusion is that the WATER indicator within VIVA framework can provide more precise recommendations for the optimal management of water use during the vineyard phase, while LCA approach highlights impact hotspots related to both direct and indirect use of water resources (e.g., it points out the relevant contribution of the bottling stage to different impact indicators). The comparative application of both methodologies can provide useful insights into the water-related impacts of different wine production processes and stages and support a comprehensive assessment of the best management practices, unless the differences in the methodological approaches and goals are well understood by assessors.

In light of the considerable pressure exerted by food production on the environment, the assessment of the environmental burdens of dietary choices has recently gained interest among the scientific community. Several studies based on life cycle thinking approach agreed that a transition from an omnivorous to either a vegan or vegetarian diets would reduce the environmental impact associated with food consumption. The majority of the studies set the system boundaries up to the retail, excluding the consumption phase and generally do not account for uncertainties. The aim of the present study was to assess how personal consumption choices and behaviour can affect the greenhouse gas emissions generated by three balanced dietary patterns (omnivorous, vegetarian and vegan), defined on the basis of nutritional recommendations for an average Italian man. It took into consideration the uncertainties associated with three elements, namely the greenhouse gas emissions due to the production of the food items, the emissions associated with cooking and the food wasted by consumers. The results of the study highlighted that, despite the higher share of greenhouse gas emissions of the supply chain stages prior to consumption (66%-74% of the total emissions), domestic behaviours have an important influence of the total greenhouse gas emissions of the diet, which can offset the lower GHG emissions due to the choice of vegetable-origin foods. In fact, 15%-21% of the total emissions are associated to the cooking phase and 11%-13% to the food waste generation. Therefore, this study remarks the importance of adopting a cradle to grave perspective when assessing the environmental burden of dietary patterns and emphasises the central role of consumers in the definition of low GHG-emitting dietary patterns.

In this paper, we present a new approach based on the Grey Water Footprint (GWF) concept for the determination of groundwater nitrate contamination, with a focus on the agricultural impact in the Southern Apulia Region (Italy). The GWF assessment allows us to highlight wells where nitrate contamination is higher and for which a verification of the nature of contamination is necessary, potentially identifying certain contexts associated with risk factors present in the area. Data show higher nitrate GWF values for vineyards than for olive groves, particularly in areas used for the production of table grapes. Indeed, it is possible to observe that the Western Ionian-Tarantino arch is characterized by a high average level of the GWF indicator, area characterized by an agricultural land use (vineyards, orchards, simple arable land). Another important area is the Brindisi plain, predominantly characterized by an agricultural vocation and a related fertilizer use. The situation in the whole Salento peninsula is more heterogeneous. The results of the GWF show high values in equally distributed points with a clear frequency in the coastal areas of the Ionic arch (Eastern Tarantino and Salento). The Water Footprint methodology and in particular the GWF approach used in this study conceives a useful indicator for the agricultural policy planning processes, a criterion to establish land use management according to the status of hydrological basin and a tool for assessing the pollution monitoring programs.

In the agribusiness wine is certainly a very interesting sector to analyze. The specific aim of this work is to assess water efficiency and economic water productivity for the Italian wines with Appellation of Origin (AO). This assessment could represent a potential management instrument to improve production performances from a more integrated perspective, pursuing new market trends. The study is related to Italy, the first worldwide producer, and analyzes the available data of AO wines, which globally have specific features, being strictly connected with the territory and its background. The results show the top and bottom five AO wines in terms of crop water use and economic water productivity and their trends during the period 2011-2015, based on average annual change rates. Results of this study are relevant for the wine sector since they can guide decision makers on vine variety selection in the context of micro- and macro-level sustainability of water resource use.

At global scale, the majority of world water withdrawal is for the agricultural sector, with differences among countries depending on the relevance of agri-food sector in the economy. Virtual water and water footprint could be useful to express the impact on the water resources of each production process and good with the objective to lead to a sustainable use of water at a global level. International trade could be connected to the virtual water flows, in fact through commodities importation, water poor countries can save their own water resources. The present paper focuses on the bilateral virtual water flows connected to the top ten agri-food products traded between Italy and China. Comparing the virtual water flow related to the top 10 agri-food products, the virtual water flow from Italy to China is bigger than the water flow in the opposite direction. Moreover, the composition of virtual water flows is different; Italy imports significant amounts of grey water from China, depending on the different environmental strategies adopted by the two selected countries. This difference could be also related to the fact that traded commodities are very different; the 91% of virtual water imported by Italy is connected to crops products, while the 95% of virtual water imported by China is related to the animal products. Considering national water saving and global water saving, appears that Italy imports virtual water from China while China exerts pressure on its water resources to supply the exports to Italy. This result at global scale implies a global water loss of 129.29millionm3 because, in general, the agri-food products are traded from the area with lower water productivity to the area with the higher water productivity.

Groundwater is essential for human life and its protection is a goal for the European policies. All the anthropogenic activities could impact on water quality. •Conventional pollutants and more than 700 emerging pollutants, resulting from point and diffuse source contamination, threat the aquatic ecosystem.•Policy-makers and scientists will have to cooperate to create an initial groundwater emerging pollutant priority list, to answer at consumer demands for safety and to the lack of conceptual models for emerging pollutants in groundwater.•Among the emerging contaminants and pollutants this paper focuses on organic wastewater contaminants (OWCs) mainly released into the environment by domestic households, industry, hospitals and agriculture. This paper starts from the current regulatory framework and from the literature overview to explain how the missing conceptual model for OWCs could be developed.•A full understanding of the mechanisms leading to the contamination and the evidence of the contamination must be the foundation of the conceptual model. In this paper carbamazepine, galaxolide and sulfamethozale, between the OWCs, are proposed as "environmental tracers" to identify sources and pathways ofcontamination/pollution.

The food sector represents one of the major impacting sectors from an environmental point of view and, among all the products, wine emerges as one of the most studied by the literature. Single-issue approaches are commonly used, but a more comprehensive analysis is desirable, since a single indicator does not properly track the pressure on the environment. This paper presents a combined carbon and water footprint assessment, with a cradle to grave approach, for a protected designation of origin Italian red wine, and suggests a correlation among the two indicators across the life cycle phases. A total CF equal to 1.07±0.09kgCO2eq/bottle and a total WF equal to 580±30l/bottle were calculated for the studied product and a direct proportionality was found between the total CF and the sum of WFgrey(indirect) and WFblue.

The European Commission has been planning limits for organic pollutants in sewage sludge for 14years; however no legislation has been implemented. This is mainly due to lack of data on sewage sludge contamination by organic pollutants, and possible negative effects to the environment. However, waste management has become an acute problem in many countries. Management options require extensive waste characterization, since many of them may contain compounds which could be harmful to the ecosystem, such as heavy metals, organic pollutants. The present study aims to show the true European position, regarding the polycyclic aromatic hydrocarbons (PAHs) content of sewage sludge, by comparing the Italian PAHs content with European Union countries, and at assessing the suitability of sewage sludge as soil fertilizer. The FOCUS Pearl model was used to estimate the concentration of benzo [a] pyrene (B(a)Pyr), the most toxic PAH in soil, and its exposure to organisms was then evaluated. The simulated B(a)Pyr and PAHs, expressed as B(a)Pyr, concentrations in soil were much lower than the B(a)Pyr's most conservative lowest observable effect concentration (LOEC) for soil organisms. Furthermore, the results obtained indicate that it is more appropriate to apply 5tha(-1) sewage sludge annually than 15tha(-1) triennially. Results suggest, the EU maximum recommended limit of 6mgkg(-)(1) PAHs in sewage sludge, should be conservative enough to avoid groundwater contamination and negative effects on soil organisms.

Agriculture is the largest freshwater consumer, accounting for 70% of the world's water withdrawal. Water footprints (WFs) are being increasingly used to indicate the impacts of water use by production systems. A new methodology to assess WF of wine was developed in the framework of the V.I.V.A. project (Valutazione Impatto Viticoltura sull'Ambiente), launched by the Italian Ministry for the Environment in 2011 to improve the Italian wine sector's sustainability. The new methodology has been developed that enables different vines from the same winery to be compared. This was achieved by calculating the gray water footprint, following Tier III approach proposed by Hoekstra et al. (2011). The impact of water use during the life cycle of grape-wine production was assessed for six different wines from the same winery in Sicily, Italy using both the newly developed methodology (V.I.V.A.) and the classical methodology proposed by the Water Footprint Network (WFN). In all cases green water was the largest contributor to WF, but the new methodology also detected differences between vines of the same winery. Furthermore, V.I.V.A. methodology assesses water body contamination by pesticides application whereas the WFN methodology considers just fertilization. This fact ended highlights the highest WF of vineyard 4 calculated by V.I.V.A. if compared with the WF calculated with WFN methodology. Comparing the WF of wine produced with grapes from the six different wines, the factors most greatly influencing the results obtained in this study were: distance from the water body, fertilization rate, amount and eco-toxicological behavior of the active ingredients used.

Contaminant residues in food packaging is a new challenge of our time, as it may pose a threat for consumers. Higher levels of contaminants were observed in food packaging made by recycled materials, even if little information is available for some groups of contaminants. The present study proposes a procedure for analyzing three different groups of organic contaminants in recycled paper and paperboard. Seventeen commercial samples were analyzed for the presence of bisphenol A (BPA), bis (2-ethylhexyl) phthalate (DEHP), nonylphenol monoethoxylate (NMP) and nonylphenol di-ethoxilate (NDP). Not all the samples contained all the contaminants; BPA was the only substance present in all the samples. The concentrations detected were quite high and, in most of the cases, in agreement with results reported in previous studies. Substance migration tests from spiked/non-spiked samples for two dry foods and Tenax® food simulant were undertaken. BPA migration quotients were always lower than 1%, whereas the migration quotients of DEHP were higher than 2.0%. The highest nonylphenols migration quotients were 6.5% for NMP and 8.2% for NDP. Tenax® simulates well the contaminants migration from paperboard to dry food, in some cases being even more severe than the food.
